Barrel-Aged Serpent Bite
We spent just a few months aging this sour saison in bourbon barrels then added orange zest and dry-hopped it with Mandarina Bavaira hops for a pleasantly bitter sour ale with notes of oak and rind.
Serpent Bite is moderately assertive, citrusy, and acidic. Rich meats, fatty fish, and ripe cheese will be complemented by the fruit character and nicely cut by the acidity.
