1466301_514608205306014_860827483_nsmallIt’s been a little over 3 months since we began construction, and I can’t decide if it seems like it’s been much longer or much shorter than that.  We’ve taken what had basically been a concrete cave and an idea, and turned it into a physical brewery.  We also managed to hire two great people along the way.  The to-do list that I’ve been constantly updating for construction and setting up for production has actually started shrinking in the last few days as all the preparations to start production finally come to a close (of course, the to-do lists for making and selling the beer will be never ending).  Basically, we now need to do the things that take it from looking like a brewery to being able to actually act like a brewery.

Boiler and glycol chiller commissioning will happen in the next few days, we’re running CO2 and compressed air lines around the brewery, installing a cooler, and setting up the lab.  Our friends at Criveller are then coming down to commission the brewhouse they built for us.  We have 10 tons of grain (2-row, white wheat, and flaked wheat) and half a ton of hops (Azacca, Mandarina Bavaria, Lemon Drop, Wakatu, and Apollo) showing up next week.  We’ll be making beer for you here, and it will be very soon.
